Open- faced grilled vegetable sandwich:

Now melt some blue cheese in a pot, until it smoothens. Add pasta and vegetables to the pot and mix it well. Keep mixing, till all vegetables get coated with sauce, then season it with salt, nutmeg, and black pepper. Serve it warm.
Italian spinach pie:
Spinach is a vegetable, loaded with ample of nutrition. Enjoy this healthy vegetable with a zest of pie. Quickly fry some fresh leeks in medium heated oil for approximately eight minutes. Combine the spinach leaves, soft leeks, one cup of cooked rice, and one mashed potato. Then add ¾ cup of parmesan cheese, marjoram, pepper, and salt. Spread the mixture on glass pie plate and sprinkle some left cheese on top. Place the pie plate in preheated over at 375°F. Let it bake until it gets solid and brown colored. After thirty minutes, serve it warm.
Cheese tortellini with Pumpkin & Ricotta:
Cook onion in medium heated oil for about ten minutes. Add vegetable broth, pumpkin, pepper, and salt. Let it cook for twenty minutes on low flame.
On other hand cook tortellini in big pot of salted water. Drain the tortellini after it cooked tender. Toss them with ricotta. Now mix the pumpkin mixture with tortellini mixture, add roman cheese and parsley to the mixture. Toss them properly and serve warm.
Couscous stuffed peppers:
Cut peppers in such way that the upper should stand like lid, and the down part as container. Mean while; scoop out all seeds and layers of tissue. Boil the pepper containers, lid in salted water for minutes, and drain them.
Add zucchini and garlic in medium heated oil, fry them for two minutes. Mix them well with lemon juice and cook for one minute.
Now blend then in couscous, tomato, oregano, chickpeas, pepper, and salt. Add cheese to the mixture.
Fill up each pepper with couscous mixture. Cover them with the pepper lids. Bake them in preheated over at 350°F for almost twenty minutes.
Tomato- Broccoli puree:
This is very simple recipe is admired by numerous people. Cook some broccoli, potatoes and scallion in boiling water. Cook them for fifteen minutes till they get soft. Drain the vegetables and blend them all in food processor. Add the cooking water to the mixture and blend once again. Stir pepper, salt, butter, and lemon juice in the mixture. Serve with garnished pepper powder.
